Farm to Table Dining Sprouts up in Trumbull with Parallel Post, a Dean James Max Restaurant

James Beard nominated chef, Dean James Max knows a few things about running successful restaurants that people can’t get enough of.  We’re talking 3030 Ocean in Fort Lauderdale, Amp 150 in Cleveland, Asador in Dallas, Brassiere in the Grand Caymans, Latitude 41 in Columbus, and the newly opened Parallel Post in Trumbull, CT.  That’s quite an impressive portfolio, but we’re definitely excited about what this means for Connecticut and Trumbull.  You’ll be able to find Parallel Post where J. Porter’s used to be at the Trumbull Marriott Merritt Parkway right at this very moment.

The focus of Max’s new Parallel Post is on farm-to-table dining, taking in various sources from nearby farms and food producers.  More specifically, the menu focuses on Modern American cuisine, highlighted by seasonal and regional food.  Seafood comes from Norwalk’s own Norm Bloom & Sons and Foley Fish of Boston; they source meat from Ox Hollow Farm in Roxbury, CT; they bring in great cheese from Coach Farms in Pine Plains, NY and Beltane Farms in Lebanon, CT; and they have lots of greens from Gilbertie’s Herb Gardens in Westport, CT.

Using these local ingredients, you can look forward to dishes such as:

  • Coach Farm goat cheese salad with roasted heirloom beets and basil vinaigrette
  • Fire-roasted Coops Island oyster that are preserved with lemon butter and served with smoked bacon
  • Norman Bloom Clams BLT with smoked Benton’s bacon, grilled romaine, and a spicy tomato broth
  • Grilled all-natural chicken breast with roasted tomato, local gouda, and dill aioli
  • George’s Bank Scallops served up with fettuccine, smoked bacon, shallots, pea sprouts, and Parmesan bubbles.

You’ll be able to order snacks, small plates, larger dish, and even indulge in a multi-course tasting menu.  Also important to note, most of their dishes come in below $25, so you can eat and eat well without breaking the bank for local, organic, sustainable, and steroid/growth hormone free food.  At the helm of the kitchen is Chef Chris Molyneux, who was the Trumbull Marriott’s previous chef.  Also, you can expect some great drinks to be poured out here at Parallel Post by one of Max’s best mixologists, Cris Dehlavi from 3030 Ocean in Florida.  You can also expect a great selection of Connecticut beer, lots of American craft brews, and excellent beer from across the world.  The wine menu, too, will be quite expansive and will include great wines, particularly small wine producers that are family run or focus on the quality of the wine over other factors.
