Update: Guvnor’s Brewery opens this Friday, 9/13! Congratulations!
In honor of a brand new brewpub that actually makes its own beer and actually makes it in house, we contemplated writing this post with a British inflection. But, then we thought, ‘ey Guvnor, reckon it might get a tad bit mish-mashed and ya might get tally wopped. So, we’ll just stick with plain old American English. In just a few short weeks Guvnor’s Brewery is slated to be open at 136 Washington Street in Norwalk where Sweet Rexies used to be. Ever the curious Omnomivores, we reached out to Guvnor’s Brewery and got some great information from Tony Aulakh, the owner and Brewmaster.
First off, Tony goes by the name “The Guvnor,” hence the name of the brewery. Speaking of brews, they’ll be starting off with their Black Magic Stout, Full Monty IPA, and Summer Chill Wheat Ale. From there, The Guvnor will be creating a Guvnor’s Lite Blonde Ale, Red Hot Dominatrix Red/Amber Ale and an Iron Curtain Pils that’s a Czech style pilsner. In addition, you can look forward to seasonal brews from Guvnor’s such as a pumpkin ale, brown ale, and an Octoberfest style ale. And, the heart and hops behind all these different styles? Tony told us, “Our philosophy in brewing is to make the best and freshest product possible for all of our customers with varying palettes to savor and enjoy.”
Tony picked South Norwalk as a location because he loves the diversity and thinks that the city has a great view of Norwalk’s future and wants to be a part of the action. “We love the direction South Norwalk is heading,” he shared, “becoming a hip, fun loving and artsy town. Perfect for our brewery for beer is art too.” And, speaking of works of art, there is Executive Chef Peter Crawford. He has worked at Bouley in NYC, was the Executive Chef of La Panetière in Rye, and was most recently the Executive Chef at 323 Main in Westport. Crawford is putting the finishing touches on the menu now and we’re excited to see it. As for the kind of food, Tony has more to dish: “I would call the style eclectic and deliciously exclusive. That will complement not only our beers, but our outstanding wines.”
Although there have been delays along the way, you’ll be happy to know that they’ll be open up for business some time between Labor Day and the Norwalk Oyster Festival.
