Update: Rouge is open now and here’s our review.
While we’ve been to Red Lulu in SoNo right after it opened, we never had the chance to visit its sister restaurant in Greenwich: Lolita. Well, we’re not going to get that chance to ever visit this Greenwich hotspot. That’s because the cb5 restaurant group has embarked upon a monumental transformation.
Opening November 1, you’ll find ROUGE Brasserie & Oyster Bar has replaced Lolita. Much of the inspiration for this opening goes back to a previous cb5 restaurant, BLEU. At the time of its opening, BLEU was a groundbreaking restaurant and definitely pushed the limits of Fairfield County dining. And, taking it back to BLEU again, cb5 is assembling a reunion of sorts right at the restaurant. Many of the servers and bartenders are back along with Josh Moulton who returns as Executive Chef.
As we learn more about ROUGE Brasserie & Oyster Bar, we’ll let you know.

it’s open and beautiful, had a great meal I had the fish eggs and chips (caviar). Escargot: superb! & chicken pot pie ( not sure it’s French but it was Amazing). I’d recommend this place, roomy clean and stark.

Greenwich is saturated with French bistros. Versailles, L’Escale, The Penguin, Homestead, who knows where else.
Why people close and open businesses it is their business why, not yours Peter.

Yeah, there are tons of French bistros in Greenwich, it’s amazing. Le Penguin, even, being brand new! We can’t keep track of all of them. :)

This makes sense as Red Lulu closed rather recently. While both were doing pretty well initially, they’ve definitely fallen off the radar. Hopefully this new venture will bring back the excitement!

Notorious the cb5 group for opening and closing business I wonder who they owe money to this time? Same old,same old what happened to business ethics?

Hey Peter. We’re not sure of the politics around it, but it just seems like they want to rebrand Lolita to fit in more with Greenwich. That’s just our hunch. A french bistro-kinda vibe with an oyster bar is pretty classic Greenwich. What do you think?

No way that works not in Greenwich with the cost of doing business and the % so low. Have either of you worked in a restaurant ? This is not a personal reflection of you or your site, to many people don’t understand this business.Food is a luxury , alcohol is the profit and own the building and running lean you may have a shot.

Greenwich is very expensive, we totally agree with you there, Peter. And, the costs of running a business and a restaurant have to be astronomical. Plus, add in the location being a bit out of the way in Byram, it makes it tougher to get to. We don’t take it as a dig at all. We’re more on the eat lots of food and write about it side of the restaurant scene. :)

Personally, I’ve been here long enough to appreciate Byram/Greenwich restaurants such as “Amerigo’s” for so many years (1960’s-90’s), the vaious other re-creations since; “The Lobster Bin” was my 2bd fav; now there’s “Char” a Spanish/Latino/American restaurant that’s trying to do all the right things not realizing there are less expensive, better plus then the norm right down the street in Port Chester; However, back to Rogue: will be going there next week and commenting then!

Martin, just curious, why is Peter 100% and why is J Pennette and CB5 s-bags? I thought he and the company had an outstanding reputation. Anything you care to share?

Hey Peter, not every business theme works out over the course of time. I thought Pennette and the company had an outstanding reputation. Are you saying every time he closes a business he leaves others holding the bag and he owes them money? Anything you care to share? That does make someone question the business as a whole. I mean, the food could be great, but if the owner is operating under questionable circumstances, I may not want to take my family there and contribute to his antics.
