Killer Griller: Double Onion Bacon Burger Recipe from Marcia Selden Catering

Memorial Day is right around the corner and you know what that means:  time to fire up the BBQ!  Yes, it’s the official start of grilling time, so we asked Marcia Selden Catering if they could come up with a recipe for a killer burger to make all summer (or year depending on how heavy a carnivore you are) long.  Well, here’s what they shared with us:  The Double Onion Bacon Burger!  Check out this easy recipe from the good folks at Marcia Selden Catering:


We love burgers, and so do our clients! They can be dressed up, dressed down, and served for any occasion at (almost) any time of the day. This recipe has to be one of our all-time favorites, and we’re happy to share it with you. These burgers also make great sliders.

People have vastly different opinions about toasting the buns, but we love the toasted bun, but it’s entirely up to you!

Ingredients:

1 lb. ground sirloin

½ C. grated white onion

2 Tbs. BBQ sauce, plus more for topping

1 Tbs. each Kosher salt and pepper

4 slices extra sharp cheddar cheese

6 sliced thick cut bacon, cooked crisp

4 onion rolls, sliced

Iceberg lettuce and sliced tomato (optional)

Add sirloin, grated onions, BBQ sauce, and salt and pepper to a bowl. Mix well with hands to combine. Divide into 4 patties and set aside. Heat grill to medium high and cook burgers for 4 minutes per side for medium rare, adding sliced cheese once you’ve turned the burger. Remove from heat and tent with foil. Assemble burger by adding bacon, a handful of frizzled onions, a piece of lettuce, and an extra slathering of BBQ sauce.

The Frizzled Onions:

1 whole large onion

2 c. buttermilk

2 c. all-purpose flour

1 tbs. kosher salt

1/4 tsp. cayenne pepper

1 quart canola oil

Black pepper

Slice onion very thin. Place in a baking dish, cover with buttermilk and soak for at least an hour. Combine dry ingredients and set aside. Heat oil in a deep pot to 375 degrees.

Add small batches of onions, to the flour mixture, tap to shake off excess, and plunge into hot oil. Fry for a few minutes and remove as soon as golden brown. Repeat until onions are cooked.
