We’ve said it before, and we’ll say it again: Chef Pat Pascarella of Bar Sugo is the man. Yes, his pizza is great. Yes, his pasta is fresh and amazing. Yes, his Italian tapas always hit the spot. And, yes, his meatballs are the best around. But, something that people don’t know enough about is how great he is at preparing wild game. He can take an ingredient like rabbit, make it his own, and produce a dish that is just killer.

Pomegranate Glazed Quail- carrot puree, baby carrots, pumpkin seeds, lime crema
Chicken Fried Rabbit- blue cheese, pickled celery, smoked Salt
Homemade Cavatelli- duck ragu, olives, arugula, black pepper, fig compote
Wild Boar Meatballs- bacon jam, ricotta, pickled pink peppercorns
Pheasant alla Milanese- patti’s lettuce, marinated red onion, oven roasted tomatoes, black truffle, shaved pecorino crotonese
Roasted Venison Loin- broccoli rabe, chorizo, heirloom potatoes, fiore di latte, burnt honey, toasted farro
4 4.25 We came back on 5/31/13 and the food was even better, causing Kristien’s parents to say that Bar Sugo was one of the best restaurants that they had ever been to. And, we’ve been back many other times and the food is always solid.
