chocopologie-by-knipschildt-chocolatier-77307138You’ll find this on the side label of Even More Denmark, a chocolate stout brewed by Jeppe Jarnit-Bjergsø of Evil Twin Brewing in South Carolina with the help of Chocopologie by House of Knipschildt chocolatier Fritz Knipschildt.  Fritz brought his internationally known chocolate to the party that was used to brew the beer with and Jeppe took care of the rest.  After production of the beer, Fritz created Even More Denmark infused truffles that you can purchase at Whole Foods Brooklyn.

Chocopologie + Evil Twin Brewing = Even More Denmark Collaboration

Back in August we let you all know about the devilishly amazing Evil Twins Brewing.  Basically, Jeppe Jarnit-Bjergsø is a genius in the beer world.   He started brewing beer in Denmark and then the awards started rolling in.  Ratings of 99 and 100 were given to his brews…and then he moved here to America to bring a little Evil into our world. He finds breweries that he loves, sets up shop, brews some kill beer, packs it, then heads off to the next location.  Case in point:  Ryan and the Beaster Bunny, a saison that was produced right at Two Roads in Stratford, CT.

Chefs at Bar Sügo + Chocopologie Swap Kitchens for Contest

While we’ve been to Chocopologie many times and have feasted upon their chocolates just as much, we have yet to hit up Bar Sügo.  This new restaurant on Wall Street is run by Chef Pasquale Pascarella and has been creating quite the buzz lately and is on our “to-eat list.”  While one of their major selling points has been a great variety of meatballs, the rest of the menu (which changes often) looks inspired, fresh, and creative.

Well, Pat (Pasquale) thought of a great idea…to hold an “Artisan Iron Chef” dinner that involved Fairfield Cheese Company, Bar Sügo, Saugatuck Craft Butchery, and Saugatuck Grain & Grape.  That dinner, to be held on 1/21 was quickly sold out.  But, fret not.  Seeing the success of that dinner, he’s thought of another great idea…Chef Swap.

The chef swap involves Pat and Fritz Knipschildt of Chocopologie.  On February 18 25 (changed to a week later), Fritz will take over the kitchen of Bar Sügo with Pat as his sous chef.  Then, on February 19 26, Pat takes over Chocopologie in Norwalk with Fritz as his sous chef.  That seems a bit too easy, right?  Of course…too easy.  So, they’ve thrown in a catch.  Both Pat and Fritz will be picking a secret ingredient for the other chef to cook a four course dinner with.  If you need two judges, Pat and Fritz, we know two people who write a certain blog about food in Fairfield County who are interested!  Hint, hint, wink, wink, nod, nod.

Make Truffles with Master Chocolatier Fritz Knipschildt of Chocopologie

Celebrate the new year with the gift that keeps on giving:  chocolate truffles.  It keeps on giving because you’ll learn how to make your own batch.  But, we’re not talking just any plain ol’ truffle that you could pick up at CVS.  We’re talking truffles that have brought Oprah to her knees (and probably made her break a diet or two).  Yes, we’re talking about the fine work of master chocolatier Fritz Knipschildt.

Fritz is the owner of Chocopologie Cafe, a favorite spot in Norwalk and becoming a go-to spot for hungry and chocolate-crazed Stamfordites.  Join Fritz (a Chopped alum) at either of these spots for a nice light dinner (savory crepes, sandwiches, or salads) followed by a dark chocolate truffle making class.  Yes, yes…you’ll be able to take the truffles home.  But, most importantly, you’ll learn how to make these yourself and will have the recipe with you to treasure.

The restaurant week machine never shuts off here in Connecticut!

This is an incredible time for voracious eaters who like to save some dinero and to try new spots.  While it’s hard to pass up a great burger at Chocopologie, some beer and nice gastogrub at The Ginger Man, we’d like to hit up Estia (not Estia’s American in Darien), Atlas, and finally try Match.  What’s your plan of attack for this restaurant week?  Hitting up old faves or trying new ones?  Let us know!
