Executive Chef Leslie Tripp and his team will be your tour guide through the whole experience, not only telling you about the restaurant’s philosophy and practices with local farmers and food suppliers, but also walking your through, step by step, how to create culinary masterpieces. You know you’re in great hands with Chef Tripp since he’s a graduate of the prestigious Le Cordon Bleu in Paris and spent some time at Michelin Starred Le Manoir aux Quat’ Saisons in England alongside our hero, Gordon Ramsay, when he was just a sous chef for the legendary Master Chef, Raymond Blanc.

Got any…cheese? Carol Lake sure does and she’ll teach you to DIY!

Cheese.  That word makes us quiver and fall to our knees in weakness.  Cheese.  It’s what’s for dinner, lunch, breakfast, and even snacktime.  Cheese.  Are you sensing a theme here?  Cheese.

But, it’s hard to find someone that knows more about cheese and the art of making it than Carol Lake, owner of Simple Cheesemaking.  She made some amazing cheese at Dancing Dog Farm in New Hampshire and held classes, showing people how to make all different kinds of cheeses and homestead products.  Some of the classes that she has to offer are Beginner Cheesemaking; Parent & Child Cheesemaking; Simple Soft Cheeses of Italy (mooz, straciatella, bocconcini, and burrata); Simply Mozzarella; Jazz, Cheese & Wine; a Full Day Beginner Workshop; Yogurt, Butter & Kefir; and more.  

DSC_3062Although Carol has previously worked at Dancing Dog Farm, she is now in Fairfield County and offers more of a personal service.  In other words, if you want a class or want to learn how to make something, she’ll come to you.  She has already held a class at Wakeman Town Farm and will hold a class at Farah’s Farm in Wilton soon, too.  Her classes just might be the perfect present for the cheeselover in your life or just a great experience.  Think of it:  pure, handmade cheese that doesn’t have all those preservatives and artificial ingredients in them.

Master Mixology and Cocktail Party @ Bistro 7 in Wilton

The Char:  bourbon, muddled blackberries, fresh lemon juice, and simple syrup served on the rocks.

1) Open Jose Cuervo Margarita Mix
2) Pour in tequila
3) Add ice
4) Serve on the rocks or blend
Everybody knows this is how you make the perfect margarita…right?  Look, there’s a mix or artificial flavor packet for almost any drink you could imagine!  But that doesn’t make it great…or even drinkable.  What makes a cocktail good is finesse, detail, attention, and help from a moustached hipster.
