Adam Richman Talks with OmNomCT ’bout Burgers, NYC, the Greenwich Wine & Food Fest + more!

We’ve come across plenty of people in the food world who amaze us. Chefs whose culinary creativity blow our minds, oenophiles whose brains are virtually wine encyclopedias, brewers that can taste the slightest variation in their brews, and people who can give you a killer restaurant recommendation (with corresponding menu item) to any city in the whole frickin United States in less than 3 seconds flat. That last one describes the one, the only, Adam Richman. In terms of knowing all the great spots to eat across America, he’s a legend. From taking down legendary meals in Man vs. Food, to searching for the best sandwiches in Adam Richman’s Best Sandwich in America, to traveling across the country to find the best grub in The Traveler’s Guide to Life, it’s tough to find a more knowledgable dude.

Now, while we’re sure you all know Adam from one of those shows, or maybe even his new NBC show, Food Fighters, where experienced home cooks go up against talented and well-known chefs, you’ll all get to know him a little bit more at the Greenwich Wine & Food Festival.  He will not only be doing a demo there (he dishes about what he’s making in this interview) at 3:30 on 9/27, but he’ll also be the host of the Burger Battle that starts at 4:30 the same day.

To prep you for the big day we asked him some serious questions about how to make and where to get a great burger, his favorite baseball team (and the only team that matters)…the Yanks, prime spots to get food in his hometown Brooklyn, his new show, how he keeps things so healthy, and his plans for complete world food-domination.

Kristien: So, obviously we know why they picked you as the perfect judge for the Burger Battle at the Greenwich Wine & Food Festival…you know your way around a burger for sure.  We wanted to know, though, what do you really look for in a good burger?

Adam Richman: You know, I think everything has to be balanced. Sometimes you’ll find these burgers where it’s an average burger and an average bun with a pitchfork full of toppings. Or, sometimes the bun is overwhelming, or the burger is falling out. I think that it has to be balanced. I think that you can over topping a burger.  Because everything, more or less, can go on a burger…it doesn’t mean everything should.

A major TV network is now looking for a bakery shop assistant for a NYC area bakery run by a celebrity owner.  Whether you’re the manager of a bakery, work at the counter, dream of opening your own bakery, or even have your Baking and Pastry Arts degree, this just might be the gig for you.  The shoot dates, right now, will be around late March into April.

Fairfield County Burger Joints, Watch Out, the Real Deal Is Coming to Westport! Shake Shack- Westport, CT

We love burgers. Duh! Yep, we love them and their evil step sisters, french fries and milkshakes. So naturally when we heard Shake Shack was coming to Westport sometime in late 2011, we did a little happy dance. The funny part though, was that the happy dance was based solely off my boss, Darryl Ohrt’s, raving of the joint. We actually had never tried it. Yeah, blasphemy, we know.

But fret not. Like the good little bloggers we are we immediately hit the road for a day in the city that started at MoMA (wow, highly recommend) and ended at one of the infamous Shake Shack locations (in the Theater District to be exact). Now, I say infamous only because it’s so damn good you can’t help eating ’til it hurts.

We’ve tried a lot of  “better fast food” burgers in our life and from all over the U.S. – Five Guys Burgers and Fries, In-N-Out Burger, Whattaburger, Fatburger, Cheeburger Cheeburger, and many more.  And while it’s been quite some time since we’ve had some of those, we think it’s safe to say that Shake Shack is one of the best.

Since it’s called SHAKE Shack, let’s start with dessert first. The shakes were rich and creamy, thick, but not so thick you couldn’t get it through the straw. I got the chocolate shake and it was so choc-o-licious. Danny got the peanut butter shake and he swears it was the best he ever had. Peanut butterific if you will. Um yeah. And while we didn’t get to try the custards (‘cuz we’re pigs, but even we have our limits), we have to mention that they have a different custard for every month that you can view on their custard calendar (which I’d love to link you to, but can’t because their website is all flash, tsk tsk).

Continuing to go backwards in the progression of our meal let’s talk fries! The fries were crinkle cut, which actually is my least favorite french fry. They always end up being too soggy and starchy in the center. This wasn’t the case for these fries though. They were nice and crispy all the way though with just the right amount of salt. Oh, and of course I got mine smothered with cheese. Hot, creamy cheese. Mmmm.

Now, onto the slice of heaven in a toasty bun… the burger. I had my standard, go-to burger so I could gauge the taste against other burgers and, well, because I love my burgers this way. That’s lettuce, tomato, onion, mayo, ketchup and the best part, extra pickles. YUM! There are only so many things you can say about a standard burger, and all those things were perfect. Perfectly cooked medium, nice flavor, nice thickness, juicy, the bun seemed fresh, crispy/toasty on the outside and gooey in the middle. Yep, everything you could love in a burger.  Danny had the Shack Burger. That’s American cheese, lettuce, tomato and the secret shack sauce, a delicious mayo and ketchup based sauce. His verdict was the same as mine. A fantastic burger.

And as if this all wasn’t enough, Danny also had the Shack Cago Dog. That’s an all-beef Vienna dog on a hearty potato roll “dragged through the garden,” which means topped with a whole lot of veggies, relish, onions, cucumber, pickle, tomato, pepper, and celery salt, hold the mustard for Danny the mustard hatta. Danny said the dog was awesome, with that nice casing snap you look for in a dog and fresh toppings. And, well, who doesn’t love a nice, thick potato roll to hold it all together?

Needless to say, Danny and I are so psyched for Shake Shack to come to Westport later this year. They’re definitely going to give some of our local faves a run for their money, but for us, well, it’s just one more awesome place to enjoy a bit of burger heaven!

Are the rumors true? Is Dinosaur Bar-b-que coming to Stamford, CT?

Update:  as of 5 pm, 12/5/12, Dinosaur Stamford is open.  Check our review!

 If you haven’t had a chance to try Dinosaur BBQ yet, then either get into NYC stat or take a weekend trip up to one of their three upstate locations in Syracuse, Rochester, or Troy, because it is da bomb! See, I grew up about 45 minutes from Syracuse and went to Syracuse University, so I would hit up Dinosaur BBQ whenever I had the chance. What exactly is Dinosaur BBQ you might be asking? *ahem, blasphemy* Dinosaur BBQ is a down and dirty BBQ joint and bar that started as essentially a food truck touring motorcycle shows, fairs, and festivals before settling down at their first location in Syracuse in 1988. See, good things do start in upstate NY (like moi, hehe). Now, all four locations are frequented by bikers and BBQ lovers alike. With fantastically tender ribs and pork, delicious side dishes like to-die-for potato salad, and sauces so good they’re sold at grocery stores across the U.S., Dinosaur BBQ can rival any seasoned BBQ joint of the south!

So, when we heard a rumor a few weeks ago that my beloved Dinosaur BBQ is coming to Stamford, CT, I almost exploded with excitement.  But, never being ones to spread rumors without a little fact checking, we emailed Dinosaur BBQ’s corporate office for some answers.  So, word from the horse’s mouth is they are in negotiations for a Stamford spot (supposedly in the up-and-coming Harbor Point area), but nothing is final yet. Now it’s final. :)

So, we promise to update this post as soon as we hear more, but it sounds like things are moving along well.  Until then, there’s a Facebook page to rally for Dinosaur BBQ to come to Stamford. Hey, I know it won’t make it happen any sooner, but we can all hope, right?
