There are important events all year long: New Year’s, Thanksgiving, the 4th of July, and . . . of course . . . Girl Scout Cookie season! Ordering has already started and keeps going strong and deliveries are on their way, but if you can’t wait to get your packages in then we’ve got some great news for you. Parallel Post in Trumbull has created a wickedly decadent dessert menu using Girl Scout Cookies in conjunction with Girl Scouts of CT.

This menu that started a week ago (and goes until 2/28) was created by Executive Chef Chris Molyneux and Pastry Chef Madelyn Rendon. Up first is the Raspberry Swirl Cheesecake ($5) that is made with a Trefoils crumb crust. Next up is the Trifle ($5) that is a layered white chocolate custard that is generously sprinkled with Samoas then topped with whipped cream and just a splash of chocolate sauce. Also, you could order the Banana Cream Pie ($5), and why wouldn’t you? It’s a classic pie made with a Do-Si-Dos crust then topped with vanilla whipped cream that is sprinkled with warm and toasty coconut flakes. Lastly, you could finish things up with an Ice Cream Sundae ($4) that features vanilla bean ice cream replete with chopped Thin Mints all over the top.
